Lamma Island Tour - 8.5 hours
Lamma Island Tour

Destination: Hong Kong, China
Duration: 8.5 hours

Upon arrival to Hong Kong (Ocean Terminal or Kai Tak Cruise Terminal), disembark the ship and meet your guide. This full-day guided tour will take you on a hike over the trails of Lamma Island. Discover the culture and traditions that have sprung from this unique fishing community and learn about the island’s rich history from our expert tour guide.

Our hike will follow the winding coastal path along the island and up the hillside for majestic views over the South China Sea and neighboring Cheung Chau and Lantau Island. Lamma Island has been inhabited for over 6,000 years – this route will give you a glimpse into its past, from its abandoned banana plantations, ancestral graves, and old feng shui woods to a World War 2 Kamikaze tunnel and even, a centuries old Tin Hau temple, dedicated to the local goddess of the sea, that remains a place of prayer to this day.

We’ll stop for a fresh seafood lunch by the waterfront of Sok Kwu Wan village, before continuing to the bustling village of Yung Shue Wan. Stroll through the narrow streets of tightly packed local shops and delight in the colorful bohemian community that has gradually become part of Lamma Island’s new culture.

Weather
This experience takes place outdoors and may have to be rescheduled in the event of adverse weather conditions, as assessed on a case by case basis. If the experience needs to be rescheduled, the instructor will inform all participants via phone call of the change. As a reference, a red or black rainstorm warning or typhoon signal no. 3 or above would be unsuitable for walking experiences. Please note that the summer weather can also be very taxing.

Dress Code
Footwear: We recommend that you wear either robust walking shoes or trainers/sneakers. Casual sandals or open shoes are not suitable for trails, which can be rocky in places.

Clothing: Sun and rainfall can be intense and a hat is recommended. During the winter season (November – March) temperatures can drop with a chilling wind, so a sweater/ fleece is advisable. During the wet season (April – September) a waterproof jacket is recommended. In warmer months (May – October) it is advisable to carry a spare T–shirt or other garment to change into at the end of the hike.

Skin Protection: Suntan lotion should be used throughout the year and applied frequently during the hike. Insect repellant is not obligatory but advisable if you tend to attract insects.

Water: Please carry sufficient water for your own needs. In the warmer months, this may equate to one liter for every two hours of walking. Dehydration is a real risk on hot days. Choose mineralized rather than distilled water. Consider an electrolyte replacement drink as well.
Traditional Chinese Medicine Experience - 2.5 hours
Traditional Chinese Medicine Experience

Destination: Hong Kong, China
Duration: 2.5 hours

Upon arrival to Hong Kong (Ocean Terminal or Kai Tak Cruise Terminal), disembark the ship and meet your guide. Traditional Chinese Medicine (TCM) has a rich legacy, dating back to ancient China. Over the years, the practice has evolved into a holistic form of alternative medicine, aimed at maintaining overall health and wellness. In this 1.5 hour experience, open your eyes to the expansive world of Traditional Chinese Medicine and embrace an important part of Chinese culture that is often shrouded in mystery.

Tour a Chinese Medicine Clinic
This experience begins with a tour of a Chinese medicine clinic. Discover the curious mixture of medicinal herbs stored within the apothecary cabinet and learn about the properties and uses of some of the more popular herbs. You’ll learn about the history and evolution of TCM practice and find out what is involved in prescribing and preparing the powerful herbal concoctions.

A Private Chinese Medicine Consultation
You will then have a private consultation with Dr. Guo Yue Feng, a qualified Chinese medicine practitioner with over 30 years of experience. By examining your tongue, taking your pulse and temperature, and studying other external indicators, like your complexion and muscle tone, he will identify the imbalances in your body.

The consultation is complemented by a session with a TCM nutritionist, to determine your body constitution. You will receive advice on how to rebalance yourself, including tips on the best foods to eat and the lifestyle changes needed to remedy your symptoms and strengthen your body.

Experience a Chinese Medicine Treatment
Once diagnosed, you will have a choice of one of the following TCM treatments:

Acupuncture

Acupuncture is a healing system, where fine needles are inserted into the key blood channels   to stimulate the free flow of energy (Qi) movement through your body.

Cupping Therapy

Heated cups are placed on targeted parts of the body. Pressure is then applied to create    suction on those areas. In the process, toxins are released and blood flow is increased

Gua Sha

Meaning ‘to scrape the skin’, Gua Sha involves the use of a smooth flat object, like a spoon,   to apply broad, scraping strokes to the body. This treatment can stimulate the immune    system and relieve pain.

Herbal Steaming

This treatment allows the body to absorb the benefits of medicinal herbs through steam,    leaving you feeling cleansed and refreshed.

Highlights:
This private cruise offers a light mix of natural history, local culture, and a glimpse into the past of this very special corner of Alaska. Your experienced and enthusiastic captain will share stories of life—wild and human—as you weave through the channels, around verdant islands, and into quiet inlets surrounding the beautiful town of Sitka. Spot sea lions, eagles, and perhaps even sea otters and whales. Learn about the commercial fishing industry, native culture, and Sitka’s WWII period. See where locals have made their homes among the islands and hear about Russian past, Seward’s Folly, and the thriving present of this wonderful community balanced on the coastal edge of the Tongass National Forest. Your Captain is a USCG-licensed 100-ton master with nearly 30 years experience on the waters of Southeast Alaska—who also happens to hold a degree in forest sciences, fished commercially for 10 years, and worked as a fisheries biologist and a US Forest Service botanist. Sitka: Private Ocean and Forest: Ultimate Alaska Experience - (6 hours)
This adventure provides an intimate encounter with the coastal world of Tongass National Forest: time on the sea, and time on land, spotting both marine and land mammals, sea birds, fish, tide pools, giant trees, and good old terra firma. Beginning and ending in Sitka, your excursion starts when you board our safe and comfortable, custom-built boat. As you travel along remote shores and into quiet inlets, you’ll encounter wild animals, ancient forests, and endless miles of rugged coastline. Depending on the weather, you may visit Kruzof Island, the South Baranof Wilderness Area, and the West Chichagof Wilderness Area. Your captain will also choose a remote beach upon which to bring you ashore. Here, you’ll have a rare hands-on opportunity to explore the shoreline and forest, the flora, fauna, and ecology with your biologist/guide. As you inhale the cool freshness of old-growth forest, your captain/naturalist will share with you the wonders of this wild paradise. An Alaskan-style gourmet lunch and beverages are included.
Sitka: “To Know Sitka – Is to Love It” - (1.5-hours)
Highlights:
This experience will put you together with one of the great local characters of Sitka—someone who actually lives, plays, writes, or researches right here in the community. Having amassed a wealth of information in his/her particular field, your host will entertain and inform, providing you with the sort of intimate connection to the area that will indeed make you fall in love with it. Among those we can arrange to spend time with you are: a cultural anthropologist who earned his PhD while living in Inupiaq and Athabaskan villages in the 1960’s; a renowned whale biologist who collects DNA from humpback whales; a private investigator turned best-selling mystery writer and writer-laureate for Alaska; a fisheries biologist who was in charge of the sustainability of the commercial black cod fishery; and a Dept. of Fish and Game bear biologist who has had thousands of bear encounters. So sit back and listen, or ask questions and engage in a lively discussion. This tour may only be booked in combination with the Flavor of Sitka Sound or the Coastal Wildlife Adventure.

Sitka: Private Island Paddle and Lost Fort Trek - (3.5 hours)
Highlights:
This adventure combines two hours of kayaking with an hour-long nature walk. Following a short drive to Japonski Island, you will meet your guides and receive a short kayak & safety orientation. You will then set out on a leisurely paddle through Sitka’s harbor, home to one of the most productive commercial fishing fleets in North America. Continuing out past the breakwater to the edge of Sitka Sound, you will encounter kelp forests that fringe the coast and the colorful marine life that inhabits the intertidal zone. With bald eagles watching overhead, it is almost certain that you will see some of the other wild residents: curious harbor seals, massive steller sea lions, and playful sea otters. Occasionally, we also spot humpback, minke or orca whales. At the Causeway Islands, step ashore to discover the remains of a WWII-era fort that was as hastily abandoned as it was built. The moss-covered bunkers and fern-rimmed gun emplacements present a peculiar contrast to the peacefulness of the rainforest. After refreshments on the beach, we’ll paddle back to Sitka.

Sitka: Private Half-Day Sitka Sound Paddle and Cruise - (4.5 hours)
This paddle and cruise adventure offers a perfect introduction to the wild side of Sitka Sound. Following a kayak skills & safety orientation, you’ll set off in the shallows, getting comfortable with your craft, before we continue out to our first group of islands. While paddling through mazes of reef and kelp forest—areas accessible only by kayak—your interpreter/guide will help identify the colorful marine life visible below, including crab, sea stars, anemones, sea urchins, jellyfish, and more. At the surface, we frequently sight ever-amusing sea otters, harbor seals, sea lions, porpoises, bald eagles, and a variety of marine birds. At a seldom-visited island, step ashore to stretch your legs, do a little beachcombing, and enjoy a snack while soaking in views of the Sound. Your guide will explain some of the ecology of the area, and also tell you about the Tlingit people, who still fish using knowledge passed down since the last ice age. Finally, an exciting 30-minute boat cruise will return you to Sitka.

On this interpretive tour, a knowledgeable native will be your personal guide as you explore Baranof Island in a luxurious passenger coach or van. You will pass by many of Sitka’s historic sites, including Castle Hill Mt., the Pioneer Home, and St. Michael’s Russian Orthodox Cathedral. At the Sitka National Historical Park, follow your guide along a pathway where Totem poles impart the rich culture of the Tlingít. Step into the lush rainforest and see historic Indian River, one of Sitka’s many salmon spawning streams. Your guide will discuss totem significance, edible and medicinal plants, traditional uses of salmon, and rainforest ecology. At the visitor center, visit with Native artisans practicing traditional arts such as carving, beading and weaving. You’ll also enjoy reserved seating at the Naa Kahídi Native Dance Performance, held inside a traditional-style Tlingít Clan House. Sitka: Full Day Wild Coast Paddle and Cruise (8 Hours)
If you thrive on adventure, if you hunger for wild places and endless views, if you love to explore at whatever pace suits your mood; a full-day Wild Coast Paddle & Cruise will be the highlight of your time in Alaska.
There is no such thing as a “typical” Wild Coast Paddle & Cruise – like snowflakes, no two are the same – and your paddling guide will help to design a route plan that suits your preferences as well as it fits the day’s sea and weather conditions.  Your adventure will either begin or end with an exciting one-hour cruise aboard our sturdy transport vessel.  Use of the shuttle boat allows you to explore almost twice as much of the Sound in the same amount of time.
No matter what route we paddle, the scenery will be amazing.  Sitka Sound is bordered by hundreds of untouched coves, inlets and narrow passages, each containing their own secrets waiting to be discovered.  And the waters of the Sound are sprinkled with almost countless un-named islands and reefs.  This is the perfect sea kayaking environment, and you’re certain to explore some areas inaccessible by any other means.  Few activities can match the experience of gliding silently across the canopy of a kelp forest – the clear waters revealing views of undersea gardens and marine life, while seals bask on the rocks and curious sea otters poke their little flat heads as high as possible out of the water to get a better look at you.  There is also a very good chance of sighting steller sea lions or humpback whales.
At the half-way point in our voyage we’ll step ashore on a seldom visited island to stretch our legs, do a little beachcombing, and enjoy a delicious picnic lunch.  The total paddling time on our full-day exploration is 5-6 hours, in which time we’ll travel about 6-8 miles, depending on your preferences.  Although it’s not a strenuous activity, we recommend the full-day paddle only for those who are in good physical condition.

Anyone can put a line in the water, but it takes special skill to catch Alaskan salmon, halibut, and bottom fish. After spending most of their lives unraveling the mysteries of Alaska fishing, your experienced fishing guide has all the skills you need to catch fish. What's more, they're ready to spend the day teaching you what they know. As fishing conditions change with the seasons and the weather, an Alaskan fishing expedition allows you to head out during any of the summer months with confidence that you will see good action. Your captain will only fish for those species that have been producing the most in recent weeks. During the peak of the summer season from June 15th to August 15th, you will have the best chance at catching multiple species.

The combination of salmon and halibut fishing destinations and techniques have been selected by Ketchikan's top guides. This comprehensive fishing experience is intended for the avid fisherman who wants to learn the finer points of Alaskan fishing. The private marina is just a short block away from downtown Ketchikan, so you'll have a full day to learn the tricks of the salmon and halibut fishing trade. Every fisherman has a pole with this custom experience limited to six guests at a time in a cabin cruiser.
After a day of trolling, jigging, and mooching, you'll know the difference between a spoon and a hoochie, as well as the best way to catch a king, coho, or pink salmon, or a halibut. Best of all, whatever you catch is yours to keep (along with some of the best seafood recipes).

In Italy, no dish is more symbolic of home cooking than pasta! In this class, guests learn to make pasta from scratch. VIVA FIESTA
Taking inspiration from Spanish tapas, this class provides a robust menu for a tasty Mexican snacking party, including a lesson on how to make the perfect Mexican cocktails.

HEALTHY GREEK
The birthplace of the Mediterranean diet was on the island of Crete and those same fundamentals were used to build the menu for this class. Participants will master plant-based dishes that are hearty and satisfying, and also learn to season meats to optimize their flavor. Lots of extra virgin olive oil and honey will flow during this class as well.

CARIBE
The Caribbean is a celebration of cuisines from all over the world.
